Goat Cheese-Berry Bruschetta1 small whole-wheat baguette, bias-cut into 12 slices 1/4" thick
1/4 lb strawberries, hulled and quartered
1 scallion, white and green parts, sliced
1 tsp agave nectar
2 grinds black pepper
2 oz soft goat cheese
4 chives, snipped
Preheat oven to 350°F.
Set baguette slices on a small baking sheet and bake for 10 to 12 minutes, until golden and crisp. Remove and cool.
In a food processor, pulse strawberries, scallion, agave nectar, and black pepper until chopped. (Do not puree.)
Spread 1 teaspoon goat cheese on each baguette slice, top with 1 teaspoon strawberry mixture, then sprinkle with chives.

Fruity BBQ sauce: In a saucepan, combine 6 oz strawberries, chopped; 3/4 cup rice wine vinegar; 1/2 cup strawberry all-fruit preserves; 5 chopped scallions (white parts only); 1/2 jalapeno pepper, seeded and minced; 3 Tbsp brown sugar; 1/2 Tbsp tomato paste; and 1/2 tsp grated fresh ginger. Bring to a boil over medium-high heat and cook, stirring frequently, for 5 minutes. Reduce heat to medium-low and simmer, stirring occasionally, for 5 to 10 minutes, until reduced. Blend until smooth. Brush on chicken and bake or grill, basting with more sauce periodically. Makes 1 cup.
